Everyone who’s dieted for a show knows that when it’s crunch time we stick to the basics in terms of “diet foods”. A lot of us are on low carbs and it’s hard to be creative. I stumbled upon this recipe and integrated it right into my contest prep. It is a simple Ultra-Low carb pancake mix. Most people put oatmeal into their protein pancake, which works if we want the carbs. But what do we do if we are depleting?? Should we be deprived of a great breakfast? NO!
The recipe calls for:
- 2 whole eggs
-2 tbsp Flaxseed meal
-1 scoop protein
- 2 tbsp Cinnamon
- 2 oz water
*I throw in a little sugar free syrup as well*
Step 1: Mix together your egg flax and protein mixture so there are no clumps.
Step 2: Add water *(and sugar free syrup if desired) into the mixture so it becomes more of a batter.
Step 3: Turn on the stove and mix in the cinnamon for extra flavor.
Step 4: Spray your pan with non stick spray and pour some of the mixture into the griddle.
Step 5: Enjoy!
This recipe will give you about 3 good sized pancakes.
*Be sure to spray the pan with nonstick spray every time before you pour in the batter.*
Depending on what protein you use that will dictate your nutritional value. I use a slow digesting protein so my meal can hold me over for a longer period of time. When I am carb depleting I try do anything I can to stay full. The only carbs you will get out of this meal is the carbs in whatever protein powder you use. Not to mention the flaxseed meal will definitely keep you regular! This meal will give you roughly 365 Calories, 20.5 grams of fat, and 36.5 grams of protein. I heat up peanut butter and make it into a low-carb syrup to put on these and it is amazing! I hope you guys enjoy and don’t be afraid to step outside the box while prepping for your shows, as well as eating clean in your “off-season.”
