Sweet Potato Apple Almond Crisp
Serves 12
2 large sweet potatoes
3 apples
3 tbsp coconut oil
2 tsp cinnamon
1/2 cup almond meal
1/2 cup almond slices

Preheat oven to 375 degrees. After baking the potatoes (micphoto 5rowave them for about 6 minutes) I let them cool before slicing them along with the apples.  Place them in a bowl and mix with the coconut oil and cinnamon.  Spread into baking dish or onto a pizza pan and top with almond meal and almond slices.  Bake for approximately 40-45 minutes.

Feel free to top with non-fat Greek yogurt, raisins, honey, or peanut butter! The possibilities are endless.  Not only does the crisp deliver a satisfying combination of flavor, but sweet potatoes provide magnesium which is a stress reducing mineral that can be especially helpful to possess in abundance during the holidays.  It is also helpful for heart, muscle, and nerve function.

Coconut oil is also very beneficial to the heart and can reduce blood pressure levels and cholesterol.  Plus, apples can improve your body's immune system and detoxify your liver.  This year, bring the Sweet Potato Apple Almond Crisp to your holiday gathering and share not only joy, but a handful of health benefits, too!
