Peach Protein Frittata Recipe

For this recipe I used a pea protein instead of the traditional whey you see more commonly.

Peas have no major allergens and are great for post-workout nutrition for athletes who may have difficulty supplementing with other types of protein.

The NOW Sports pea protein I tried out tasted great and worked perfectly for this. Any other protein powder would work as well.

Here is the recipe:

•One carton or 4 cups of egg whites

•3/4 C smashed slivered almonds

•3 peaches

•4 scoops of Now Sports Vanilla Toffee Pea protein powder or your favorite brand/flavor

•1/2 C Steel Cut oatmeal cooked for 2 min

•1/2 tsp stevia

•a little powdered vanilla

Lightly coat a pie dish with olive oil, crush almonds and arrange in a layer and put in oven under the broiler until toasted.

Set oven temp to 350, arrange a layer of sliced peaches on top of the almonds and put back in the oven for 6 minutes.

Whisk all other ingredients and partially cooked oatmeal then slowly pour on top of baked peaches.

Cook for 40 minutes. Pull it out and put remaining peaches on top. 

Turn the oven off and put back in for 10 more minutes.
